Everyone can prepare sandwich to one’s taste, but the secret to the most delicious homemade sandwich lies in soft and tender Georgian sulguni
cheese, that melts ideally. The dish serves four persons. Here is the recipe:
• 8 slices of bread
• 500 grams of chicken breast without skin and bones
• 1 tablespoonfuls of oil
• 1 small onion
• 2 fresh tomatoes or tomatoes in their own juice
• ½ cods of red and spicy pepper by taste
• 1 teaspoonful of khmeli
suneli (dry seasoning)
• 8 slices of Suluguni
• 1 small and red onion
• ½ teaspoonful of sugar
• 1 tablespoonful of vinegar
• A pinch of red spicy malted pepper
Cut onion into thin half-rings and stew it in butter until soft. Slice chicken breast and fry, stirring frequently, over high heat. Add the chopped tomatoes, season with salt, chopped hot pepper, stir and cook until the sauce thickens. Season with khmeli-suneli and cool to the room temperature.
Arrange the stew on the half slices of bread. Put the slices of suluguni and the remaining slices of bread on them. Press the sandwiches and bake in the contact grill. Or put them in a grill pan, put another, heavy pan on top and heat over moderate fire until cheese is melted.
Cut the red onion into thin rings, season with salt, sugar, vinegar and red pepper.
Serve sandwiches with marinated red onion rings on top of them.
